- Look for plump, firm artichokes with fresh, green leaves. A good artichoke should have tightly packed leaves and no brown spots or holes.
- When you get home, put the artichoke in a glass of water with the stem ends up so it doesn’t rot.
- Store artichokes in a perforated plastic bag in the crisper drawer of your refrigerator for up to 5 days.
- If you will be using them right away, you don’t have to do anything else! Just cut off the stem and remove any outer leaves that aren’t as fresh looking as they should be (you can use those as compost).
- Cut off the stems and trim 1/2 inch off the tips of the leaves with kitchen shears; cut larger leaves in half lengthwise. Cook in boiling water for 15 minutes or until tender, then plunge into ice water; drain well and serve or add to salads or soups.
